Homemade gravy made from bacon fat, homemade veggie stock and some of the potato water. Cottage cheese. Kind of like a loco moco crossed with poutine?? It was honestly really good, especially the gravy!!! I think it looks better with the gravy on top of the cottage cheese.
Next time, I would make the wedges cubes instead of... wedges, and maybe try to make a hamburger patty with oatmeal, onion and mushroom, kind of like a meatloaf or scrapple sort of thing, to be more in line with actual moco locos. If you have a good name for this, let me know!
